Macadamia Nut Protein Bombs

If "POWERBAR" wasn't already taken, that's what I'd call these. A gram of carbs is 4 calories- same with protein. A gram of fat is 9 calories. I bring this up, because if you're a high performer (or strive to be one), including the right type of fats in your diet can be like switching your engine from regular gas to high octane fuel. "Calories" equal "energy," after all. These little fat-bombs provide some pretty high energy and taste good too!

This is a bake-free recipe is for 16 squares, divide the ingredients by two for 8 bars, by four for 4 bars, and so on.

Here's what you'll need;

  • 1 lb (16oz) of Macadamia Nuts (Raw almonds work as well, but macadamias are best!)
  • A food processor
  • 6-8 tbsp of Coconut Oil (and/or MCT oil)
  • 4 tbsp Chia or Flax Seeds
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • Sweetener (I used xylitol & stevia)
  • 3 tbsp coconut flour
  • 4 tbsp whey protein
  • 4 tbsp collagen protein
  • Optional; 1/2 tsp cinnamon

Step 1: Put your macadamia nuts into a food processor along with the sea salt, coconut oil and your sweetener. Blend for a few minutes until the you get a creamy, buttery consistency.

Step 2: While your nuts are being turned to butter, mix your protein powder, 2 tbs coconut flour (save some for mixing), chia seeds and cinnamon in a seperate bowl.

Step 3: When your macadamia butter is made, mix it slowly into the bowl to create a creamy, not-to-thick, not-to-thin "dough". If it looks too oily, add that extra coconut flour you saved until creamy.

Step 4: Lay into a baking sheet that will fit in your freezer, making sure it is totally flat and spread evenly. It make be a little runny- that's okay. Let freeze for about 45 minutes- cut into squares and keep in the refrigerator for a quick on-the-go snack.
