Recipe: "Green" Meatloaf

This is one of my favorite "meal prep" foods to make in the beginning of the week. It's a meatloaf recipe I came up with that my girlfriend Dina has nicknamed "Green Meatloaf." Coulda went with HULK-loaf or something bad ass along those lines, but that's okay I guess. We both dweeb out and love to talk about food, so when she started asking "are you having your green meatloaf tonight?" the name just stuckDina doesn't eat meat on most days so this is a perfect go-to for me when I need something quick and don't feel like cooking something from scratch.


SO, here's what you'll need;
  • A loaf pan (duh)
  • 1 lb of grass-fed ground beef and 1 lb of ground lamb- you can replace with 2lbs of ground beef, but lamb is delicious ( ;
  • 4 Eggs
  • Mixed greens- I use swiss chard, kale and spinach- about 2 servings will do (two big handfuls)
  • Fresh cilantro
  • Seasoning- I use sea salt, turmeric, cayenne pepper, black pepper, oregano, rosemary
  • Apple cider vinegar
  • Coconut oil or butter (to grease the pan)
  • Coconut flour (a tablespoon will do)
1. Preheat the oven to 330 F- you're cooking at a low heat in order not minimize the loss of nutrients and proteins in the meat and eggs- this helps lead to the food "high" you get from the foods I make. 

2. Add your seasoning to a bowl- about a teaspoon of sea salt, tablespoon of turmeric, oregano and rosemary- cayenne and black pepper to taste (I use more cayenne but still add black pepper since it works with turmeric to increase bio-availability of nutrients). I also add fresh chopped cilantro for added flavor.

3. Open the ground beef and lamb and use your (hopefully clean) hands to mash them together forming a big meaty bulk. When you're satisfied with your work of art, pat the meat down thin, pour your seasoning over the meat and mix them together by hand.


4. Crack four eggs into a blender with a tablespoon of apple cider vinegar, and add your green vegetables. Blend lightly- just enough to emulsify the kale, spinach and/or Swiss chard into the eggs, making a hulk-green liquid.

5. In a bowl, pour the hulk juice over the seasoned beef/lamb and mix together- the meat will soak up most of the egg mixture. Add up to a tablespoon or two of coconut flour to help "soak up" the green eggs.


6. Use coconut oil to grease the loaf pan. Place your concoction into the loaf pan and get ready to put into the oven. Now is a great time to add any additional "toppings" you like to add onto your meatloaf. Jalapeno peppers, bacon or zucchini all work great. Bake for one hour.

 

That's it! I'm a big eater so my lunch or dinner will be about 1/4 of the meatloaf, so I'll cut it into four, refrigerate 3 slices for later and eat one almost right away- usually over a salad or with some avocado and kimchi like right here.
